Thank you so much, dear Drew. I'm so pleased this cheered you. You can make this strickly vegan by just omitting the corned beef. Cook the carrots, potatoes and cabbage along with a few peppercorns in the hard cider at a low boil for about 25 minutes until fork tender. A low budget marvel from my mother. This may be a huge surprise, but I have never had corned beef and cabbage. I don't know how I became 66 years old without it. If there has not been a run on the ingredients, I'll try it. The few times I go to the store is very early in the morning, before others can get there. Thank you for sharing.

Have wonderful celebration of this godly man who did so much for Ireland, bringing the gospel to them with the love and forgiveness of the Lord.
