I love gazpacho!!! I'm Spanish and that's a Spanish dish. It's great in summer.

My recl is a little different....
Tomatos
Cucumbers
Green pepper (optional)
Vinegar
Olive oil
Bread crumbs

Blend in a blender until creamy soup consistency

I'll have to taste your receipi too.

You hate 'onions' twice.

Well done!

Thank you Gypsy. I don't use a blender. I dice the veggies and just put them in the soup base.

I used to love eating gazpacho. I rarely see it offered at restaurants anymore. I don't have a food processor otherwise I'd try to make it myself. The imagery was incredible. Beautifully written. Gretchen

Thanks so much Gretchen. You don't need a food processor. Just dice your tomatoes and cucumbers by hand and add it to the soup.
