Spanish before finally remembering Danke, sehr dank. -- I don't know German, but should this be sehn, as in the following sentence?

Yes. But sehr is (I don't know the correct terminology) like a contraction, a familiarity. Danken Sie, Danken sehn, sehr Danke - la mismo.
