Marvelous! Thank you for the great recipes and thank you for this wonderful tribute to Dolly! I am so glad you ventured into poetry in this post and I hope you write more this year! I tried ceviche only once and it was really quite good but don't know if it's safe but I eat sushi so I can't talk.

    Helen, thank you so much for a great review. I enjoy sushi also, mostly a variety of rolls. Ceviche has never been my thing?

    Question- I?m asking various writers what their favorite dish is? Or comfort food? Can be from breakfast, lunch or dinner. From there I?d do a post, something along the lines as I did with Dolly. I would love for you to be a part of this for 2024.

    I'll have to give that some thought. I'm very veggie-oriented. Like today I made up a sandwich with chopping a boiled and mixing with avocado and topped that on a Keto toast with broccoli sprouts. I'm guessing not many would be drooling over this! Lol.

I love your recipes and always learn something new to try. My husband and I have fish every Friday, often in a restaurant, and many times broiled with shrimp at home. From this post I'll be trying the inclusion of baby kale.

Christine is going to love the sea bass and fennel salad. I surely loved reading about it.

I am absolutely positive Christine will absolutely love this sea bass. I can't imagine she wouldn't. A few times a year, my husband and I go down to the Gulf to our favorite restaurant for the catch of the day. Fresh fish is always better than pre-frozen. Thank you for sharing.

This work has reached the exceptional level

John, this is the most impressive post I've read in the two/three years I've been here. You have provided a list of wonderful dishes that I intend to copy and have a go at it. Okay, I get the Guinness but I prefer tequila when cooking fish. As for ceviche, I learned from the Mexicans in Cortez fish camps. Crab, lobster and any white fish will do. Marinate with lime, diced onions, jalapeno, and tomatoes. Cilantro is hard to find at a fish camp. Mix everything in a large container and cover with a clean t-shirt to keep flies off. Place in sunlight, go fishing, come back in about four to five hours. Cook your catch of the day while eating corn chips with ceviche. Drink beer and tequila to be able to tell the biggest fish lie in the camp. Go to sleep happy.

I followed some of that. The writing was fine enough to read easily. (or easily read, depending on my thickness). I had to read back through thinking that I missed the part about 'bring the grease to a rolling boil'. So I read through a third time specifically in search of the jalapeno hush puppies. Did you forget to upload page 2?

I join you in your congratulations to Christine (our "Hello Dolly!") IN her honor I will NOT offer a recipe. I'd hate to have anyone cut their fingers while opening a frozen dinner. (smile)

I love that you opened with a poem about not writing poems! (Very clever)

I'm allergic to seafood. Not just shellfish (that's torture enough) -- but all seafood!

Worse? It came upon me when I was fifteen, long after I'd developed a taste for it.

Alas, I will look at your recipe and appreciate it from afar.

I do enjoy all of your recipes, John.

Sound as if you garnished it wll. Love the way you prepared it but to be honest Sea Bass is a bit boney for me. Just as Freshwater Bass is. Like you know to do, no good without a touch of lemon.
