HI! BILLYBAD. I'm sorry Billy, but you seem to have your wires crossed. To me this is neither a Limerick nor a 5-7-5.
I think you are in for a big disappointment in this Contest
I suggest not just an Edit, but a complete Rewrite.wiljacro.

Unfortunately you have a real entertaining poem. But it is not a 5'7'5 poem

A 5'7'5 poem only consist of 3 lines and can't be exceeded which, you have correct.

it is meant to be displayed like follows.

Line 1: 5 syllables
Line 2: 7 syllables
Line 3: 5 syllables

you currently have the following syllable count...

There once was a guy named (6)
to try and catch trout, all night he'd cast out(10)
his pole baited with anchovies and gizzards (12)

try cutting out some words to bring your syllables down.

there once was a guy (5)
catching trout all night, cast out - (7)
gizzard baited pole (5)
